Making Your Own Sausage (without a meat grinder!)

I love sausage! Sausage balls, sausage biscuits, sausage rolled up in a pancake and dipped in maple syrup… Sausage is wonderful! Unfortunately, the junk they put in commercially made sausage isn’t so wonderful. Have you ever read the ingredients label on a package of sausage? Nitrites, nitrates, sugar, artificial color, and the list goes on.

It’s almost impossible to buy packaged sausage that is actually good for you. Fortunately, making your own sausage is easy, and you don’t have to feel guilty about eating it when you use healthy meat and add your own healthy ingredients. So go ahead and enjoy scrambled eggs and sausage once again for breakfast, guilt free, courtesy of these sausage recipes.


Breakfast Sausage

This recipe came from our chiropractor, and I’ve tweaked it just a little to fit our family. It’s very easy and tasty. I usually double or triple it, then put individual sized servings in small baggies and freeze them. Then, when I’m making a quiche, scrambled eggs, or even pizza, and I need some sausage, I just pull a baggie or two out of the freezer, quickly thaw, and toss it in.


Ingredients:
1 pound ground meat (such as turkey, beef, or pork)
1 tsp. onion powder
¼ tsp. cumin
¼ tsp. black pepper
¼ tsp. oregano
cayenne pepper to taste
¼ tsp. ginger
2 tsp. sea salt
2 Tbsp. Mary’s Gone Crackers, crushed

Directions:
Combine all of the ingredients in a large bowl. Crumble, or shape into patties or links. Cook in a pan sprayed with olive oil over medium low heat until brown.
